Braising, Explained

Half-submerged, low oven, lid on.

Braising is a two-step method: sear first for flavour, then cook low and slow, partly covered in liquid, until it falls apart. The cut should sit about halfway submerged, not fully drowned, so the top still gets some direct heat under the lid.
