Tart, warm and quietly comforting. This one’s for the cool days, when the rain taps the roof and something sweet feels like a good idea.

Preheat oven to 180°C or 160°C fan. Lightly grease a medium baking dish.
Add apples and a splash of water to a saucepan. Bring to a boil, then turn the heat down and cover. Simmer for 4 to 5 minutes until the apples are just starting to soften.
Add rhubarb and sugar. Stir and simmer uncovered for another 2 to 3 minutes until the rhubarb is just tender. Taste as you go. Adjust the sugar if you like it sweeter.
Drain off any excess liquid. Spoon the fruit into your prepared dish.
To make the crumble, rub the butter into the flour with your fingertips until it looks like coarse breadcrumbs. Stir in the oats, brown sugar, salt and nuts if using.
Sprinkle the crumble evenly over the fruit.
Bake for 25 to 30 minutes until golden on top and bubbling underneath.
Serve warm with cream or ice cream.
