Ingredients
12 large prawns peeled and deveined (400g)
4 Garlic cloves minced
2 tbsps Olive oil
250 g Cherry tomatoes halved
65 g Fresh spinach
Spaghetti or your favourite pasta
Lemon juice and zest
Red pepper flakes optional
Parmesan cheese grated
Directions
- Cook pasta according to package instructions.
- In a pan, sauté prawns and minced garlic in olive oil until prawns are cooked.
- Add halved cherry tomatoes to the pan and cook until softened.
- Toss in fresh spinach until wilted.
- Mix cooked pasta with the shrimp, tomatoes, and spinach.
- Drizzle with olive oil, lemon juice, and zest. Add red pepper flakes if desired.
- Top with grated Parmesan before serving.
