Ingredients

  • 1 tbsp oil
  • 1 small onion – diced
  • 80 g Nduja – broken up and squished with a fork or roughly chopped
  • 3 garlic cloves – crushed
  • 400 g Passata
  • 160 g pasta – I used Capunti but Penne will work fine
  • 1 small handful of fresh basil
  • Parmesan to serve

Instructions

  • Put a pot of salted water on to boil.
  • Meanwhile, in a frying pan over medium heat, add the oil, onion, and a pinch of salt and cook for 5 minutes.
  • Add the Nduja and garlic and cook for another 3 minutes squishing the Nduja with the back of your spoon as you go.
  • Add the pasta and simmer for 20 minutes. After about 5 minutes of simmering, you want to get your pasta into the water and cook according to the packet. Mine took 13 minutes to cook.
  • Once your pasta is cooked, add it to the sauce and combine. Add the basil and top with parmesan.
