Go Greek Chicken Bake

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp @season.andko Go Greek
  • 1 zest and juice of one lemon
  • 4 chicken thighs – skin on – bone in
  • 1 red onion – diced
  • 1 zucchini – diced
  • 1 red capsicum – diced
  • 1 punnet cherry tomatoes
  • ½ cup kalamata olives pitted
  • 100 g fetta – crumbled
  • Salad greens for serving

Instructions

  • Preheat the oven to 200c
  • In a bowl, combine the oil, red wine vinegar, salt, pepper, go Greek seasoning and the zest of the lemon.
  • Add chicken thighs to a bowl, cover in the marinade, and mix well with your hands. Set aside and chop your veggies.
  • In a frying pan (use an oven-proof one and save yourself some dishes) over medium heat, add a splash of oil and place your chicken thighs skin down to brown. Cook for 3 minutes and then flip and cook for another 3.
  • Add the onion, zucchini and capsicum to the pan and transfer to the oven. Cook for 30 minutes.
  • After 30 minutes, add the tomatoes and olives and cook for a further 15 minutes.
  • Remove from the oven, add the fetta and serve with salad greens.
  • Enjoy!
