Go Greek Chicken Bake

Ingredients
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp salt
- 1 tsp pepper
- 2 tsp @season.andko Go Greek
- 1 zest and juice of one lemon
- 4 chicken thighs – skin on – bone in
- 1 red onion – diced
- 1 zucchini – diced
- 1 red capsicum – diced
- 1 punnet cherry tomatoes
- ½ cup kalamata olives pitted
- 100 g fetta – crumbled
- Salad greens for serving
Instructions
- Preheat the oven to 200c
- In a bowl, combine the oil, red wine vinegar, salt, pepper, go Greek seasoning and the zest of the lemon.
- Add chicken thighs to a bowl, cover in the marinade, and mix well with your hands. Set aside and chop your veggies.
- In a frying pan (use an oven-proof one and save yourself some dishes) over medium heat, add a splash of oil and place your chicken thighs skin down to brown. Cook for 3 minutes and then flip and cook for another 3.
- Add the onion, zucchini and capsicum to the pan and transfer to the oven. Cook for 30 minutes.
- After 30 minutes, add the tomatoes and olives and cook for a further 15 minutes.
- Remove from the oven, add the fetta and serve with salad greens.
