Curry Traders Bangladesh Prawn Curry

Downside to working with incredible brands last year? I’m officially addicted! 😅 I was so obsessed with the Curry Traders Rendang curry, so I had to order more. With that order came a few more freebies, including my new favourite, Bangladesh Prawn Curry.

Ingredients

  • 1 x Bangladesh Prawn Curry Traders Kit Bags 1-4
  • 1.5 kg peeled raw prawns
  • 6 garlic cloves – crushed
  • 1 tbsp. ginger – crushed
  • juice of a lemon
  • 5 ripe tomatoes – diced
  • 1 tbsp vegetable oil
  • 2 large onions – diced
  • pinch of salt
  • 1 fresh pineapple – diced
  • ½ cup water
  • 165 ml coconut milk
  • ½ bunch coriander

Instructions

  • In a large bowl mix Bag 3 with garlic, ginger, a drizzle of oil and half the lemon juice. Add prawns or cand coat. Place in the fridge for 20 minutes.
  • Grind contents of Bag 2 in mortar & pestle (or use a spice grinder)
  • In a deep sided fry pan, heat oil over low-medium heat.
  • Stir in onions, salt and Bag 1 cook for 10 minutes or until onions are soft. Add tomatoes. 
  • Stir in Bag 2, cook for 10 minutes.
  • Turn off heat, let cool for a few minutes then whiz up in a blender.
  • Pour blended contents back into saucepan.
  • Add pineapple, and the rest of the lemon juice.
  • Simmer for 5 minutes. Add coconut milk and stir through.
  • Add Bag 4 and marinated prawns or chicken.
  • Cook until prawns are cooked through, approx. 5 minutes 
  • Garnish with coriander and serve with basmati rice.
