Choc Chip Cookies
Super soft, super delicious. These cookies have been the most popular post on Instagram and, well, basically wherever I take them.
Ingredients
- 225 g dark chocolate 62% to 70% cacao (roughly chopped)
- 70 g milk chocolate roughly chopped
- 150 g sugar
- 165 g brown sugar
- 225 g unsalted butter at room temperature
- 300 g flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs at room temperature
- 1 tsp vanilla extract
Instructions
- Add the butter and sugars to a stand mixer with the paddle attachment. Cream the ingredients together on a low speed for a few minutes and then increase to medium speed until light and fluffy (5-6 minutes). You want to stop occasionally and scrape down the sides of the bowl with a spatula.
- Add flour, baking powder and salt into a bowl, stir to combine, and then add roughly chopped chocolate chunks. Set Aside
- Combine eggs and vanilla into a bowl and whisk lightly. Reduce stand mixer speed to low and slow drizzle in to combine.
- Once eggs are mixed through, remove the bowl from the stand mixer, add the flour/chocolate mix, and use a spatula to fold through until combined… please don’t overwork it.
- Place in an airtight container and refrigerate overnight (or at least an hour)
- Preheat oven to 175’c
- Use an ice-cream scoop (or a spoon) to scoop the mixture onto a tray lined with baking paper.
- Cook for 12-15 minutes on the middle rack until they look ready to throw in your face.
- Once taken out of the oven, sprinkle with salt and leave them on the tray for 5 minutes, then move to a cooling rack.
