Chicken and Black Bean Tacos

Taco Tuesday! My favourite day of the week and this simple little number will leave your mouth watering. If you don’t like beans, simply swap them out with corn!

Ingredients

  • Chicken thighs boneless and skinless (500g), diced
  • 1 can of Black beans – drained and rinsed
  • Taco seasoning don’t use the s@*# with all the added sugar
  • 12 Tortillas I used corn because that’s what I had
  • 1 x Avocado sliced
  • Shredded lettuce
  • Salsa it’s mid-week, buy your favourite
  • Lime wedges limes can be expensive, but you need acidity. Sliced pickled onions are a good alternative

Instructions

  • Season diced chicken thighs with taco seasoning.
  • In a pan, cook the seasoned chicken until fully cooked.
  • Add the black beans to the chicken to warm through
  • Warm corn tortillas. (I throw them directly on the gas burner, but a dry pan also works)
  • Assemble tacos with cooked chicken, black beans, sliced avocado, shredded lettuce, and salsa.
  • Serve with lime wedges on the side.
