Ingredients

  • 180 g Dark Chocolate – roughly chopped
  • 120 g Unsalted Butter – cut into cubes
  • 125 g Caster sugar
  • 90 g Brown sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 130 g Plain flour
  • 3 tbsp Cocoa powder
  • 1 tsp Baking powder
  • 1/4 tsp salt
  • Flaky salt to top cookies with Preheat the oven to 160

Instructions

  • Preheat the oven to 160'c
  • Add chopped chocolate and butter to a saucepan, and melt over low heat (don’t burn it). Stir it until it has melted completely, and set aside.
  • Combine the caster sugar, brown sugar, eggs, and vanilla extract in a bowl. Beat on medium speed (with an electric mixer) for 5 minutes until the mixture becomes pale and fluffy.
  • Pour in the melted chocolate mixture and beat on low speed for 1 minute until combined.
  • Shift in the flour, cocoa, baking powder and salt and use a spatula to fold the mixture together.
  • Use a scoop, spoon, or whatever to put little balls of goodness onto a lined baking tray.
  • Bake for 12 minutes, sprinkle with salt and let them sit on the tray for 5 minutes before moving to a cooling rack and letting cool completely before devouring.
