Brownie Cookies
What came first? The cookie? Or the brownie? Who cares, let’s all eat brownie cookies
Ingredients
- 180 g Dark Chocolate – roughly chopped
- 120 g Unsalted Butter – cut into cubes
- 125 g Caster sugar
- 90 g Brown sugar
- 2 Eggs
- 1 tsp Vanilla extract
- 130 g Plain flour
- 3 tbsp Cocoa powder
- 1 tsp Baking powder
- 1/4 tsp salt
- Flaky salt to top cookies with Preheat the oven to 160
Instructions
- Preheat the oven to 160'c
- Add chopped chocolate and butter to a saucepan, and melt over low heat (don’t burn it). Stir it until it has melted completely, and set aside.
- Combine the caster sugar, brown sugar, eggs, and vanilla extract in a bowl. Beat on medium speed (with an electric mixer) for 5 minutes until the mixture becomes pale and fluffy.
- Pour in the melted chocolate mixture and beat on low speed for 1 minute until combined.
- Shift in the flour, cocoa, baking powder and salt and use a spatula to fold the mixture together.
- Use a scoop, spoon, or whatever to put little balls of goodness onto a lined baking tray.
- Bake for 12 minutes, sprinkle with salt and let them sit on the tray for 5 minutes before moving to a cooling rack and letting cool completely before devouring.
