Beef Short Rib Tacos
Ingredients
- 700 g Beef Short Rib
- 2 tbsp olive oil
- 2 tbsp @season.andko Taco Tuesday
- 1 punnet cherry tomatoes
- 1 onion halved
- 2 teaspoons @urbanforagerorganics Beef stock mixed with 500ml water
- 2 tbsp Chipotle in Adobo Sauce
- 6 corn tortillas
- 2 cups grated cheese
- 1 onion diced
Instructions
- Preheat the oven to 135’c
- Coat your beef short ribs in 1 tbsp oil and then rub in the Taco Tuesday Seasoning
- Heat an oven-proof casserole dish over medium heat and brown the short ribs on all sides. Add cherry tomatoes, onion, beef stock and Chipotle.
- Cover and place in the oven for 6 hours.
- Remove from the oven, allow to cool, blitz the cooking liquid, and shred the meat.
- In a frying pan over medium heat, add some oil. When hot, dip a tortilla in the cooking liquid, place in the frying pan, coat with cheese, meat, a little sauce and onion and then fold in half and cook for 2 minutes on each side.
