Beef Short Rib Tacos

Ingredients

  • 700 g Beef Short Rib
  • 2 tbsp olive oil
  • 2 tbsp @season.andko Taco Tuesday
  • 1 punnet cherry tomatoes
  • 1 onion halved
  • 2 teaspoons @urbanforagerorganics Beef stock mixed with 500ml water
  • 2 tbsp Chipotle in Adobo Sauce
  • 6 corn tortillas
  • 2 cups grated cheese
  • 1 onion diced

Instructions

  • Preheat the oven to 135’c
  •  
  • Coat your beef short ribs in 1 tbsp oil and then rub in the Taco Tuesday Seasoning
  •  
  • Heat an oven-proof casserole dish over medium heat and brown the short ribs on all sides. Add cherry tomatoes, onion, beef stock and Chipotle.
  •  
  • Cover and place in the oven for 6 hours.
  •  
  • Remove from the oven, allow to cool, blitz the cooking liquid, and shred the meat.
  •  
  • In a frying pan over medium heat, add some oil. When hot, dip a tortilla in the cooking liquid, place in the frying pan, coat with cheese, meat, a little sauce and onion and then fold in half and cook for 2 minutes on each side.
