Beef and Greens Stir Fry
Midweek meal hero – The Stir fry
I get it. You’re worried. Don’t be. Stir-fries don’t deserve the bad rap they receive. I find simple is best (like pizza), don’t overcomplicate it, and please don’t overcook the veg because it’s gross.
This one makes the rotation almost weekly at my place.

Ingredients
- 2 tbsp cornflour
- ½ tsp white pepper
- 500 g beef rump – sliced thinly
- 2-3 tbsp veggie oil
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp water
- 1 bunch broccolini or spring onion, bok choy, basically any Asian greens
- 2 cm piece ginger peeled and grated
- Rice for serving
- 2 tsp toasted sesame seeds for serving
Instructions
- Combine the cornflour and pepper in a bowl and mix well. Add the beef and coat.
- Heat a wok over high heat, and add 1 tbsp oil to coat the wok. Stir fry the beef in batches for 3 minutes or until browned. Transfer to a bowl and set aside.
- Meanwhile, mix the Oyster, soy, dark soy and water in a small bowl.
- Add the remaining oil to your wok, add your greens and fry for 3-4 minutes until they begin to soften (don’t make them gross and soggy). Add the ginger and fry for another 1 minute.
- Return the beef to the pan, add the sauce mixture, and then cook for 2 minutes until the sauce thickens. Serve with rice and top with sesame seeds.
