Apple and Rhubarb Crumble

Servings: 1 Hungry person or if youre sharing 4-6
Ingredients
- 6 green cooking apples peeled and sliced
- 1/4 cup caster sugar
- 1 cinnamon stick
- 1 bunch rhubarb wash it and cut into 3cm batons
For the Crumble
- 60 g butter
- 1/2 cup self-raising flour
- 3/4 cup rolled oats
- 1/3 cup brown sugar
To Serve
- ice cream or custard…. or just a giant spoon
Instructions
- Preheat the oven to 200’c.
- Add the apples, rhubarb, sugar, cinnamon and about 80ml of water in a saucepan over a medium heat. Simmer, covered, for 8-10 minutes, or until apples and rhubarb are just tender. Remove and discard cinnamon stick.
- Meanwhile, place the butter and flour in a food processor and process until it resembles chunky breadcrumbs. Stir in the oats and brown sugar and set aside.
- Spray your pie dish with a little oil (or rub with some butter) spoon the apple and rhubarb mixture in, top with the crumble mix and cook for about 20-25 minutes until the crumble is nicely golden and you just want to dive right in.
